The idea for New Bub Club began in late 2019, after Darby had her first son in London. Like many new parents, she quickly realised how overwhelming that season can be and how easily something as essential as nourishing yourself falls to the bottom of the list. While everyone talks about the importance of eating well postpartum, the reality is that most parents simply do not have the time, energy, or capacity to make it happen.
When Darby moved to Australia in 2020, she saw an opportunity to rethink her career in law and pursue something more aligned with her experience. By early 2021, she was testing meals, and by October that same year, New Bub Club officially launched with deliveries made from the back of her car. At the same time, she was pregnant with her second child, marking the beginning of a journey that has always been about balancing business growth with family life.
Today, New Bub Club is a small, hands-on operation led by Darby, supported by a team of five in the kitchen and a nutritionist who ensures every meal is genuinely nourishing. What sets the brand apart is its intention. This is not just about convenience. It is about providing families with time, mental space, and support during one of life’s most demanding stages.
The food itself reflects that philosophy. Meals are designed to feel homemade, comforting, and familiar, like something your own family would cook for you. That approach also leaves room for creativity, where unexpected tweaks and so called “happy accidents” in the kitchen often lead to some of their most loved dishes.
Like many businesses in the food space, navigating pricing and margins has been an ongoing challenge. Rising costs across food, labour, and logistics require constant adjustment, especially when trying to keep meals accessible for families. For Darby, this has meant getting very clear on the true value of what New Bub Club offers, not just meals, but a sense of relief and support, and pricing in a way that reflects that.
Despite the challenges, the wins have been meaningful. Customer feedback continues to be one of the most rewarding parts of the journey. Hearing that their meals made someone’s postpartum period easier, or helped families get through dinner time without stress, is what drives the team forward.
One of the most significant milestones has been building a loyal base of
long-term customers. Many families have been on weekly subscriptions for over three years, a reflection of both consistency and the ability to evolve while maintaining quality and trust.
Internally, the team culture plays a big role in that consistency. Everyone works across all areas of the kitchen, from prep to dishes to cooking, creating a shared sense of responsibility and collaboration. A genuine love of food connects the team, often seen in the simple act of sharing meals and ensuring everyone is well fed.
For Darby, balancing business and family is an ongoing process rather than a perfect system. Running New Bub Club while raising young children has required letting go of the idea of doing everything herself and becoming comfortable with outsourcing and asking for help. In many ways, the business itself has become part of that solution, with her own family relying on New Bub Club meals to simplify daily life.
Before starting the business, Darby worked as a lawyer in both New York and the UK, most recently supporting refugee children in Europe. That experience shaped her perspective on care, support, and community, values that are now embedded in New Bub Club, just expressed in a different way.
Looking ahead, the vision for New Bub Club is to grow alongside its customers. While it began as a postpartum focused service, the goal is to evolve into a trusted meal solution for busy families at every stage of life. Expanding the product range while maintaining a strong focus on quality, nourishment, and ease will be key to that growth.
For Darby, success is not defined by a single “you’ve made it” moment. Instead, it is about continuously building, improving, and evolving the business over time. A meaningful milestone for the future would be creating opportunities to give back, whether through providing meals or supporting community initiatives on a regular basis.
